I wanted to make something on a Sunday that could be my lunch for a couple days this week. This sort of worked, but I wasn’t completely impressed with the recipe from Everyday Food. The slaw just wasn’t very flavorful. This is one of those recipes going directly into the circular file. But if someone else can find a way to modify it and improve it – more power to you. Perhaps it did not turn out so well because I cooked the chicken myself, rather than using a store-cooked rotisserie chicken. I just couldn’t get myself to buy such a large amount of chicken for just me!
1 rotisserie chicken (abt 2 1/2 lbs)
1 Granny Smith apple, cut into matchsticks
2 English cucumbers, cut into matchsticks
2 scallions (green parts only), thinly sliced
1/4 cup mayonnaise
3 T Dijon mustard
2 T cider vinegar
1/4 cup honey
coarse salt and ground pepper
4 hamburger buns
Shred the chicken, divide among buns, and top with apple-cucumber slaw.
