I love pancakes, but really hate making them. I hate having to watch them, and flip them, blah, blah, blah. Then you can only make a few at a time, and keep them warming in the oven. No fun. So I started making pancake muffins! Use the same recipe as you would for regular pancakes, but instead of heating up the stove, preheat your oven to 350 and grease your muffin/cupcake pan. Scoop the mix into the muffin tins, and bake for 13-15 mins, or until toothpick comes out clean.
These particular pancake muffins are filled with country sausage or blueberries. These could definitely be made with any of your other favorites…chocolate chips, pecans, cinnamon… They are especially great for kids sleepovers, brunches, and even packaged and saved for an on-the-go breakfast. They freeze well.
